Alex's Red Barn Winery features  a rare Solera sytem that produces excellent
Sherry wines in the tradition of historical Spanish sherry producers of Jerez de
la Frontera. The
Solera is a set of barrels arranged in tiers, one above the other.
The top tier contains the youngest wine, while the more aged wines are stored
in the successive lower tiers,ending with the most aged wine in the bottom tier
of barrels. Once a year, Sherry is taken out of the lowest tier for filtration,  
blending and bottling. The amount of wine withdrawn from the bottom tier is
replaced with an equal amount from the next higher tier, and so on. New sherry
is then used to replenish the top tier. The process is then repeated the following
year. Only the bottom tier is normally called the Solera. Other tiers are called  
Criaderas, Spanish for "nursery".

Sherries come in three distinct varieties: Fino. Amontillado and Oloroso.  Fino is
a light-colored wine with  a taste of hazelnuts. Amontillado is a long-aged Fino,
darker in color and usually higher in alcohol that Fino. Oloroso is still darker in
color, sweeter and higher in alcohol than the others.  Our Cream Sherry is a full
Oloroso. It is made of the Palomino grapes, as are 90 % of Spanish Sherries.  
When you taste it, it will remind you of what Shakespeare said of it in Henry
IV:  " A good Sherri-sack hath a two-fold operation in it. It ascends me into the
brain; dries me there all the foolish and dull and crudy vapours which environ it;
makes me apprehensive, quick, forgetive,  full of nimble, fiery and delectable
